Ingredients

  • 1 cup grated Parmesan cheese
  • 1 cup chopped fresh herbs (parsley, basil, thyme)
  • 4 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta, Parmesan, herbs, eggs, salt, pepper, and nutmeg.
  3. Fold in cherry tomatoes and olive oil.
  4. Transfer the mixture to a greased baking dish.
  5. Top with breadcrumbs.
  6. Bake for 30-35 minutes until golden and set.
