  • 1 cup ricotta cheese
  • 1/2 cup pomegranate seeds
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, pomegranate seeds, parsley, garlic, salt, and pepper.
  3. Make a pocket in each chicken breast by slicing it horizontally.
  4. Stuff each pocket with the ricotta mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear each stuffed chicken breast for 3-4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes.
  8. Let rest for 5 minutes before serving.
