- 4 chicken breasts
- 1 cup ricotta cheese
- 1/2 cup pomegranate seeds
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, pomegranate seeds, parsley, garlic, salt, and pepper.
- Make a pocket in each chicken breast by slicing it horizontally.
- Stuff each pocket with the ricotta mixture.
- Heat olive oil in a skillet over medium heat.
- Sear each stuffed chicken breast for 3-4 minutes per side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes.
- Let rest for 5 minutes before serving.
Notes
- Serve with a side salad for a complete meal.
- You can substitute spinach for parsley if preferred.
