Ingredients

  • 4 chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup spinach, chopped
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ricotta, spinach, parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast.
  4. Stuff each pocket with the ricotta mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear the chicken for 3-4 minutes on each side until golden.
  7. Transfer chicken to a baking dish and bake for 20-25 minutes.
  8. Check internal temperature, it should reach 165°F (74°C).
