- 1 cup ricotta cheese
- 1/2 cup spinach, chopped
- 1/4 cup parmesan cheese, grated

Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix ricotta, spinach, parmesan, garlic, Italian seasoning, salt, and pepper.
- Cut a pocket in each chicken breast.
- Stuff each pocket with the ricotta mixture.
- Heat olive oil in a skillet over medium heat.
- Sear the chicken for 3-4 minutes on each side until golden.
- Transfer chicken to a baking dish and bake for 20-25 minutes.
- Check internal temperature, it should reach 165°F (74°C).
