Ingredients

  • 2 medium beets, roasted
  • 2 oranges, segmented
  • 1 cup walnuts, toasted
  • 4 cups mixed greens
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45-60 minutes until tender.
  3. Let beets cool, then peel and slice.
  4. In a large bowl, combine mixed greens, orange segments, and walnuts.
  5. Add roasted beets to the salad.
  6. In a small bowl, whisk olive oil, balsamic vinegar, salt, and pepper.
  7. Drizzle dressing over the salad and toss gently.
  8. Top with crumbled feta cheese.
