Description
A refreshing salad with roasted beets, oranges, and walnuts.
Ingredients

- 2 medium beets, roasted
- 2 oranges, segmented
- 1 cup walnuts, toasted
- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in foil and roast for 45-60 minutes until tender.
- Let beets cool, then peel and slice.
- In a large bowl, combine mixed greens, orange segments, and walnuts.
- Add roasted beets to the salad.
- In a small bowl, whisk olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over the salad and toss gently.
- Top with crumbled feta cheese.
Notes
- Can substitute walnuts with pecans.
- Best served fresh.
- Use fresh oranges for the best flavor.
