Ingredients

- 2 medium beets, peeled and diced
- 2 large carrots, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 ounces burrata cheese
- 2 cups mixed greens
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced beets and sliced carrots with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 25-30 minutes or until tender.
- Let the roasted vegetables cool.
- In a large bowl, combine mixed greens and roasted vegetables.
- Drizzle with balsamic vinegar and toss gently.
- Top with burrata cheese before serving.
