A delicious roasted leg of lamb seasoned with herbs.
Ingredients

- 1 leg of lamb (5–6 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the mixture all over the leg of lamb.
- Place the lamb in a roasting pan.
- Roast for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven and let it rest for 15 minutes before slicing.
