A tasty Roasted Red Pepper Frittata that is easy to make and perfect for breakfast or brunch.

- 6 large eggs
- 1 cup roasted red peppers, chopped
- 1/2 cup onion, diced
- 1/2 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk the eggs and season with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced onion and sauté until translucent.
- Stir in the chopped roasted red peppers and spinach.
- Pour the eggs into the skillet and let cook for a few minutes.
- Sprinkle feta cheese on top.
- Transfer the skillet to the oven and bake for 15-20 minutes until set.
- Remove from oven and let cool slightly before cutting.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Feel free to add other vegetables or meats.
- Serve warm or at room temperature.
