Ingredients

  • 1 cup roasted red peppers, chopped
  • 1/2 cup onion, diced
  • 1/2 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk the eggs and season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add diced onion and sauté until translucent.
  5. Stir in the chopped roasted red peppers and spinach.
  6. Pour the eggs into the skillet and let cook for a few minutes.
  7. Sprinkle feta cheese on top.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until set.
  9. Remove from oven and let cool slightly before cutting.
