Ingredients

  • 2 medium summer squashes, sliced
  • 1 tablespoon olive oil

  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sliced summer squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet.
  4. Roast in the oven for 20-25 minutes until tender.
  5. Remove from the oven and sprinkle parmesan cheese on top.
  6. Return to the oven for an additional 5 minutes to melt the cheese.
  7. Garnish with fresh parsley before serving.
