Ingredients

- 2 bell peppers, sliced
- 1 onion, sliced
- 1 zucchini, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 flour tortillas
- Optional toppings: avocado, salsa, cilantro
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the vegetables.
- Add olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss to coat.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 20-25 minutes until tender.
- Warm the tortillas in a skillet or microwave.
- Assemble the fajitas by placing roasted vegetables on tortillas.
- Add optional toppings as desired.
