A delicious roasted veggie tart served in squares.
Ingredients

- 1 sheet puff pastry
- 2 cups mixed vegetables (zucchini, bell peppers, onions)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 egg
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a baking sheet.
- In a bowl, mix the ricotta cheese, egg, salt, and pepper.
- Spread the ricotta mixture over the puff pastry.
- Chop the vegetables and toss them with olive oil, salt, and pepper.
- Spread the vegetables over the ricotta layer.
- Top with shredded mozzarella cheese.
- Bake for 25-30 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes.
- Cut into squares and garnish with fresh basil.
Notes
- You can use any seasonal vegetables.
- Feel free to add herbs like thyme or oregano.
- Serve warm or at room temperature.
