Ingredients

  • 1 sheet puff pastry
  • 2 cups mixed vegetables (zucchini, bell peppers, onions)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a baking sheet.
  3. In a bowl, mix the ricotta cheese, egg, salt, and pepper.
  4. Spread the ricotta mixture over the puff pastry.
  5. Chop the vegetables and toss them with olive oil, salt, and pepper.
  6. Spread the vegetables over the ricotta layer.
  7. Top with shredded mozzarella cheese.
  8. Bake for 25-30 minutes or until golden brown.
  9. Remove from the oven and let cool for a few minutes.
  10. Cut into squares and garnish with fresh basil.
