  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 250 grams (2 cups) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 50 grams (1/2 cup) walnuts or pecans, chopped (optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a loaf pan (approximately 9×5 inches) and line it with parchment paper for easy removal.
  2. In a bowl, combine the chopped dates with boiling water. Let them soak for about 15-20 minutes until softened.
  3. In a large mixing bowl, use an electric mixer to cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the soaked dates (including the water). Mix until just combined. If using, fold in the chopped nuts.
  7. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Place the loaf in the preheated oven and bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
