Delicious salted caramel truffles with a rich chocolate coating.
Ingredients

- 1 cup heavy cream
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1 teaspoon sea salt
- 8 oz dark chocolate, chopped
- 1/2 cup cocoa powder
Instructions
- In a saucepan, combine cream, sugar, butter, and salt. Heat over medium until sugar dissolves.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Remove from heat and stir in chocolate until melted and smooth.
- Chill mixture in the refrigerator for 2 hours or until firm.
- Once firm, scoop out small balls and roll into truffles.
- Roll truffles in cocoa powder to coat.
- Store in an airtight container in the refrigerator.

- Adjust salt to taste for desired saltiness.
- Let truffles sit at room temperature before serving for better texture.
