Description

Samoas Cookie Pie is a delicious dessert that combines the flavors of caramel, coconut, and chocolate in a convenient pie format.

Ingredients

Scale
  • 1 pre-made pie crust (9-inch, preferably graham cracker or shortbread)
  • 1 cup sweetened shredded coconut
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans or walnuts (optional, for added crunch)

Instructions

  1. Preheat the oven: Begin by preheating your oven to 350°F (175°C).
  2. Toast the coconut: Spread the shredded coconut evenly on a baking sheet. Toast in the preheated oven for about 5-7 minutes, stirring occasionally, until golden brown. Keep a close eye on it to prevent burning. Once toasted, remove from the oven and set aside to cool.
  3. Prepare the filling: In a medium saucepan over low heat, combine the caramel sauce, sweetened condensed milk, and unsalted butter. Stir continuously until the butter is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract and salt.
  4. Assemble the pie: Pour half of the caramel mixture into the pre-made pie crust, spreading it evenly. Sprinkle half of the toasted coconut on top of the caramel layer. If using, add the chopped nuts at this stage for extra texture. Pour the remaining caramel mixture over the coconut and nuts, then top with the rest of the toasted coconut.
  5. Melt the chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and a tablespoon of butter. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  6. Drizzle the chocolate: Using a spoon or a piping bag, drizzle the melted chocolate over the top of the pie, creating a decorative pattern.
  7. Bake the pie: Place the assembled pie in the oven and bake for 15-20 minutes, or until the filling is bubbly and the crust is golden brown.
  8. Cool and serve: Allow the pie to cool at room temperature for at least 30 minutes before slicing. This will help the filling set up a bit more. Serve slices on a simple white plate, and enjoy the gooey caramel and crunchy coconut textures!

Notes

  • For a richer flavor, consider using dark chocolate chips instead of semi-sweet.
  • If you prefer a thicker crust, you can make your own crust using crushed cookies and melted butter.
  • This pie can be made a day in advance and stored in the refrigerator. Just make sure to let it come to room temperature before serving for the best texture.
