Description

A hearty sausage potato soup that warms you up.


Ingredients

Scale
  • 1 pound of sausage
  • 4 cups of diced potatoes
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • 2 cups of kale, chopped

Instructions

  1. In a large pot, brown the sausage over medium heat.
  2. Add the onion and garlic, cooking until soft.
  3. Stir in the potatoes and chicken broth.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the heavy cream and kale, cooking for another 5 minutes.
  6. Season with salt and pepper to taste.

Notes

  • Feel free to add other vegetables.
  • Adjust the thickness by adding more or less cream.
  • Store leftovers in the fridge for up to 3 days.
