- 1 lb Italian sausage
- 2 cups fresh spinach
- 1 cup marinara sauce
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook rigatoni according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add Italian sausage, breaking it apart, and cook until browned.
- Stir in marinara sauce and spinach. Cook until spinach wilts.
- Add cooked rigatoni to the skillet. Toss to combine.
- Serve hot, topped with Parmesan cheese.

- Use turkey sausage for a lighter option.
