Ingredients

  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and bell pepper, sauté until soft.
  3. Add garlic, paprika, and cumin, cook for 1 minute.
  4. Add diced tomatoes, salt, and pepper, simmer for 10 minutes.
  5. Make two wells in the mixture, crack an egg into each well.
  6. Cover and cook until eggs are set.
  7. Toast the bread slices.
  8. Serve shakshouka over the toast and garnish with parsley.
