Ingredients

  • 1 cup long-grain rice
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion, bell pepper, celery, and garlic. Sauté until soft.
  4. Stir in rice and Cajun seasoning. Cook for 2 minutes.
  5. Add chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Stir in shrimp and cook until pink and cooked through.
  8. Season with salt and pepper. Serve hot.

Notes

  • Use any type of shrimp you prefer.
  • Adjust the spice level by adding more or less Cajun seasoning.
  • Leftovers can be stored in the fridge for up to 3 days.
