Shrimp spinach stuffed pasta rolls are a delicious and satisfying dish. They combine tender pasta, creamy filling, and flavorful shrimp.

- 12 jumbo pasta shells
- 1 cup cooked shrimp, chopped
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions. Drain and set aside.
- In a bowl, combine chopped shrimp, spinach, ricotta cheese, 1/2 cup mozzarella, Parmesan, egg, garlic powder, and Italian seasoning.
- Stuff each pasta shell with the shrimp and spinach mixture.
- Spread 1 cup of marinara sauce on the bottom of a baking dish.
- Place the stuffed shells in the baking dish and cover with remaining marinara sauce.
- Sprinkle the rest of the mozzarella cheese on top.
- Bake for 25-30 minutes until heated through and cheese is melted.
Notes
- Use fresh shrimp for better flavor.
- You can substitute spinach with kale.
- Make it ahead and refrigerate before baking.
