Description

Ingredients

  • 12 jumbo pasta shells
  • 1 cup cooked shrimp, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions. Drain and set aside.
  3. In a bowl, combine chopped shrimp, spinach, ricotta cheese, 1/2 cup mozzarella, Parmesan, egg, garlic powder, and Italian seasoning.
  4. Stuff each pasta shell with the shrimp and spinach mixture.
  5. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the baking dish and cover with remaining marinara sauce.
  7. Sprinkle the rest of the mozzarella cheese on top.
  8. Bake for 25-30 minutes until heated through and cheese is melted.

Notes

  • Use fresh shrimp for better flavor.
  • You can substitute spinach with kale.
