Delicious shrimp sushi boats perfect for a light meal or appetizer.
Ingredients

- 2 cups sushi rice
- 1 lb shrimp, peeled and deveined
- 4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Wasabi, for serving
- Soy sauce, for serving
Instructions
- Cook sushi rice according to package instructions.
- Mix rice vinegar, sugar, and salt in a small bowl. Stir until dissolved.
- Once rice is cooked, mix in the vinegar mixture and let cool.
- While rice cools, boil shrimp in salted water until pink, about 2-3 minutes.
- Slice the nori sheets into boat shapes.
- Place a scoop of rice in each nori boat.
- Add shrimp, avocado, and cucumber on top of the rice.
- Serve with wasabi and soy sauce.
