Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Wasabi, for serving
  • Soy sauce, for serving

Instructions

  1. Cook sushi rice according to package instructions.
  2. Mix rice vinegar, sugar, and salt in a small bowl. Stir until dissolved.
  3. Once rice is cooked, mix in the vinegar mixture and let cool.
  4. While rice cools, boil shrimp in salted water until pink, about 2-3 minutes.
  5. Slice the nori sheets into boat shapes.
  6. Place a scoop of rice in each nori boat.
  7. Add shrimp, avocado, and cucumber on top of the rice.
  8. Serve with wasabi and soy sauce.
