A mild and flavorful slow-cooked beef vindaloo dish.
Ingredients

- 2 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons vindaloo paste
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 2 tablespoons vinegar
- 1 tablespoon brown sugar
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Brown the beef in a skillet over medium heat.
- Add onions, garlic, and ginger to the slow cooker.
- Stir in the vindaloo paste, tomatoes, broth, vinegar, and sugar.
- Add the browned beef to the slow cooker.
- Season with salt.
- Cover and cook on low for 6-8 hours.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or naan.
- Adjust the spice level with more or less vindaloo paste.
- Let leftovers sit overnight for better flavor.
