Ingredients

  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons vindaloo paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons vinegar
  • 1 tablespoon brown sugar
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Add onions, garlic, and ginger to the slow cooker.
  3. Stir in the vindaloo paste, tomatoes, broth, vinegar, and sugar.
  4. Add the browned beef to the slow cooker.
  5. Season with salt.
  6. Cover and cook on low for 6-8 hours.
