Ingredients

- 1 lb chicken breast
- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups chicken broth
- 1 tsp thyme
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Place chicken, lentils, onion, carrots, celery, and garlic in the slow cooker.
- Pour in the chicken broth.
- Add thyme, cumin, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken before serving.
- Stir and enjoy your soup.

- Adjust seasoning to taste.
- Can add spinach or kale for extra nutrients.
- Store leftovers in the refrigerator.
