- 1 cup brown rice
- 1 can black beans, rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 cup shredded cheese
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Place chicken in the slow cooker.
- Add brown rice, black beans, corn, salsa, cumin, chili powder, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks before serving.
- Top with cheese, avocado, and cilantro.
