Ingredients

- 1 pound chicken thighs
- 4 cups chicken broth
- 2 cups water
- 2 packs ramen noodles
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, sliced
Instructions
- Place chicken thighs in the slow cooker.
- Add chicken broth, water, mushrooms, garlic, ginger, soy sauce, and sesame oil.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it with two forks.
- Add shredded chicken back to the slow cooker.
- Stir in bok choy and ramen noodles.
- Cook for an additional 30 minutes until noodles are tender.
- Serve hot, garnished with green onions.
Notes
- Feel free to add other vegetables like carrots or spinach.
- You can use chicken breast instead of thighs if preferred.
