Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 bell pepper, chopped
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the beef in batches, then transfer to the slow cooker.
  3. Add onion and garlic to the skillet and sauté until soft.
  4. Stir in paprika and caraway seeds, then add to the slow cooker.
  5. Add bell pepper, beef broth, diced tomatoes, potatoes, and carrots to the slow cooker.
  6. Season with salt and pepper.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Serve hot and enjoy.
