Ingredients

Instructions

  1. Cut cucumbers in half lengthwise and scoop out the seeds.
  2. In a bowl, mix quinoa, carrots, green onions, and sesame seeds.
  3. In another bowl, whisk together soy sauce, rice vinegar, sesame oil, and ginger.
  4. Pour the dressing over the quinoa mixture and stir well.
  5. Fill cucumber halves with the salad mixture.
  6. Sprinkle with salt and serve immediately.
