Description

S’mores cookie bars are a delightful twist on the classic campfire treat, combining the flavors of graham crackers, chocolate, and marshmallows into a chewy, cookie-like dessert.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 1 cup brown sugar, packed
  • ½ cup unsalted butter, melted
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • Optional: ¼ cup chocolate glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking pan by greasing it or lining it with parchment paper.
  3. In a large mixing bowl, combine graham cracker crumbs, all-purpose flour, brown sugar, melted butter, vanilla extract, salt, and baking powder to form a crumbly dough.
  4. Press two-thirds of the dough into the bottom of the prepared baking pan, then sprinkle chocolate chips and mini marshmallows on top. Crumble the remaining dough over the marshmallows.
  5. Bake for 25-30 minutes until the top is golden brown and the marshmallows are toasted.
  6. Allow to cool for 10-15 minutes, then cut into squares or rectangles.

Notes

  • Store leftovers in an airtight container at room temperature for up to three days.
  • For gluten-free, use gluten-free graham crackers or almond flour.
  • For vegan, substitute butter with coconut oil and use dairy-free chocolate chips.
