S’mores cookie bars are a delightful twist on the classic campfire treat, combining the flavors of graham crackers, chocolate, and marshmallows into a chewy, cookie-like dessert.

- 1 ½ cups graham cracker crumbs
- 1 cup all-purpose flour
- 1 cup brown sugar, packed
- ½ cup unsalted butter, melted
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon baking powder
- Optional: ¼ cup chocolate glaze
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×9-inch baking pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine graham cracker crumbs, all-purpose flour, brown sugar, melted butter, vanilla extract, salt, and baking powder to form a crumbly dough.
- Press two-thirds of the dough into the bottom of the prepared baking pan, then sprinkle chocolate chips and mini marshmallows on top. Crumble the remaining dough over the marshmallows.
- Bake for 25-30 minutes until the top is golden brown and the marshmallows are toasted.
- Allow to cool for 10-15 minutes, then cut into squares or rectangles.
Notes
- Store leftovers in an airtight container at room temperature for up to three days.
- For gluten-free, use gluten-free graham crackers or almond flour.
- For vegan, substitute butter with coconut oil and use dairy-free chocolate chips.
