Ingredients

- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken thighs with salt and pepper.
- Brown the chicken on both sides and remove from the pan.
- Add onion, garlic, and bell pepper to the pan; sauté until soft.
- Add diced tomatoes, paprika, and chicken broth; stir well.
- Return chicken to the pan; cover and simmer for 30 minutes.
- Cook rice according to package instructions.
- Serve chicken over rice with sauce on top.
