  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1⅓ cups (267g) granulated sugar
  • 1 large egg + 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • Topping: ⅓ cup (70g) granulated sugar, 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a small bowl, mix the topping: ⅓ cup sugar + 1 tsp cinnamon. Set aside.
  3. In a medium bowl, whisk together flour, cream of tartar, baking soda, cinnamon, and salt.
  4. In a large mixing bowl, beat butter and sugar on high speed until creamy (about 2 minutes).
  5. Add the egg, egg yolk, and vanilla extract. Beat until smooth and combined.
  6. Gradually add the dry mixture to the wet ingredients in three parts. Mix on low until a thick dough forms.
  7. Scoop dough into 1.5 tablespoon-sized balls. Roll each in the cinnamon-sugar topping.
  8. Place dough balls 3 inches apart on prepared sheets.
  9. Bake for 10 minutes. Cookies will appear slightly underbaked in the center.
  10. If desired, gently press the tops with a spoon for flatter cookies. Let cool on the tray for 10 minutes, then transfer to a wire rack.
