Ingredients

- 1 cup black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup cheddar cheese, shredded
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken, black beans, corn, bell pepper, avocado, red onion, cilantro, and cheese.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or refrigerate for later.
