Ingredients

  • 1 cup shredded chicken
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix chicken, black beans, corn, red bell pepper, cheese, cumin, and chili powder.
  2. Place a spoonful of the mixture in the center of an egg roll wrapper.
  3. Fold the sides over and roll tightly.
  4. Heat oil in a pan over medium heat.
  5. Fry the egg rolls until golden brown on all sides.
  6. Drain on paper towels and serve hot.
