Crispy egg rolls filled with Southwest flavors.
Ingredients

- 1 cup shredded chicken
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/2 cup diced red bell pepper
- 1/2 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix chicken, black beans, corn, red bell pepper, cheese, cumin, and chili powder.
- Place a spoonful of the mixture in the center of an egg roll wrapper.
- Fold the sides over and roll tightly.
- Heat oil in a pan over medium heat.
- Fry the egg rolls until golden brown on all sides.
- Drain on paper towels and serve hot.
Notes
- Serve with salsa or guacamole.
- Can be baked instead of fried for a healthier option.
