- 1 cup of rice
- 1 can of black beans, drained and rinsed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 2 cups of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add rice and stir for a few minutes.
- Pour in vegetable broth and mix in beans, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for about 20 minutes or until rice is tender.
- Fluff rice with a fork and garnish with cilantro.
