Ingredients

- 2 cups long-grain rice
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic. Sauté until translucent.
- Add rice and stir for 2 minutes.
- Stir in diced tomatoes, vegetable broth, chili powder, cumin, and salt.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is tender.
- Fluff with a fork before serving.

- For added flavor, use chicken broth instead of vegetable broth.
