Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and dusting with flour.
- In a large mixing bowl, combine the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Dice the apples and rinse the cranberries, setting them aside.
- In another bowl, beat the eggs and mix in the melted butter and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fold in the diced apples and cranberries, then pour the batter into the prepared cake pan.
- Bake for 45-50 minutes or until a toothpick comes out clean. Let it cool before serving.
