Ingredients

  • 3 cloves garlic, minced

  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add chicken thighs and cook until browned.
  4. Stir in red curry paste and cook for 2 minutes.
  5. Add coconut milk, soy sauce, and lime juice. Simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Serve with cilantro on top.
