Description
A spicy twist on traditional white chicken chili with Cajun flavors.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic. Sauté until soft.
- Stir in chicken, beans, corn, and green chilies.
- Add chicken broth, Cajun seasoning, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream before serving.
- Garnish with cilantro.
Notes
- Adjust spice level by adding more or less Cajun seasoning.
- Serve with crusty bread or over rice.
- Store leftovers in the refrigerator for up to 3 days.
