Description
A flavorful and spicy chili made with chicken and jalapeños.
Ingredients

- 2 cups cooked shredded chicken
- 1 can white beans (15 oz)
- 1 can diced tomatoes with green chilies (14.5 oz)
- 1 cup chicken broth
- 1 onion, diced
- 2 jalapeños, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup corn (optional)
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onion and jalapeños until soft.
- Add garlic and cook for another minute.
- Stir in chicken, beans, tomatoes, chicken broth, corn, cumin, and chili powder.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot and garnish with cilantro.
Notes
- Adjust jalapeño quantity for desired spice level.
- Can be made in a slow cooker for convenience.
- Serve with tortilla chips or over rice.
