A flavorful and spicy chili made with chicken and jalapeños.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can white beans (15 oz)
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 jalapeños, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onion and jalapeños until soft.
  2. Add garlic and cook for another minute.
  3. Stir in chicken, beans, tomatoes, chicken broth, corn, cumin, and chili powder.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot and garnish with cilantro.
