Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • 23 scotch bonnet peppers, blended
  • 1 can (400g) chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt to taste
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 2 carrots, sliced

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Add garlic and ginger and cook for 2 minutes.
  4. Stir in blended peppers, chopped tomatoes, and tomato paste.
  5. Add thyme, curry powder, and salt. Cook for 10 minutes.
  6. Add chicken pieces and coat them well with the sauce.
  7. Pour in chicken broth and bring to a boil.
  8. Reduce heat and simmer for 30 minutes.
  9. Add bell pepper and carrots. Cook for an additional 10 minutes.
  10. Serve hot with rice or bread.
