Ingredients

- 2 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add artichokes and spinach, cook for 3-4 minutes.
- Pour in vegetable broth, bring to a boil.
- Reduce heat, stir in heavy cream and parmesan cheese.
- Season with salt and pepper.
- Simmer for 10 minutes.
- Serve hot.
