Spinach Feta Egg Muffins are a healthy and quick breakfast option.

- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- 1/4 cup bell pepper, diced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the eggs and milk.
- Add spinach, feta, bell pepper, salt, and pepper to the egg mixture.
- Grease a muffin tin.
- Pour the egg mixture evenly into the muffin cups.
- Bake for 20-25 minutes or until set.
- Let cool slightly before removing from the tin.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat in the microwave for best results.
