Ingredients

  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 2 tbsp oil
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add onion and sauté until golden brown.
  4. Stir in garlic and ginger, cooking for 1 minute.
  5. Add tomatoes and cook until soft.
  6. Mix in turmeric, coriander, and red chili powder.
  7. Add lentils and water, bringing to a boil.
  8. Reduce heat and simmer until lentils are tender.
  9. Add spinach and cook for another 5 minutes.
  10. Season with salt and serve hot.
