Description

A delicious and hearty spinach mushroom lasagna.


Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a skillet, sauté mushrooms until soft.
  4. Add spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
  6. Spread a layer of marinara sauce in a baking dish.
  7. Layer 3 noodles, half of the ricotta mixture, half of the mushroom and spinach mixture, and a third of the mozzarella.
  8. Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

  • You can use no-boil lasagna noodles for quicker preparation.
  • Feel free to add other vegetables like zucchini or bell peppers.
  • This dish can be made ahead and frozen for later.
