A delicious and hearty spinach mushroom lasagna.
Ingredients

- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a skillet, sauté mushrooms until soft.
- Add spinach and cook until wilted.
- In a bowl, mix ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce in a baking dish.
- Layer 3 noodles, half of the ricotta mixture, half of the mushroom and spinach mixture, and a third of the mozzarella.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
- You can use no-boil lasagna noodles for quicker preparation.
- Feel free to add other vegetables like zucchini or bell peppers.
- This dish can be made ahead and frozen for later.
