- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup mushrooms, chopped
- 1 cup cream cheese
- 1/2 cup shredded mozzarella
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté garlic, mushrooms, and spinach until soft.
- Mix in cream cheese and mozzarella until smooth.
- Slice chicken breasts to create a pocket.
- Stuff each pocket with the spinach and mushroom mixture.
- Season chicken with salt and pepper.
- Bake in the oven for 25-30 minutes or until cooked through.
Notes
- Serve with a side salad.
- Can substitute cream cheese with ricotta.
- Ensure chicken is fully cooked before serving.
