Ingredients

- 2 cups fresh spinach, chopped
- 1 cup gluten-free flour
- 1/4 cup water
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- Blend spinach with water until smooth.
- In a bowl, mix gluten-free flour and salt.
- Add spinach mixture and olive oil to the flour.
- Knead the dough until smooth.
- Divide dough into small balls.
- Roll each ball into a flat tortilla.
- Cook tortillas on a skillet over medium heat for 2-3 minutes on each side.
Notes
- Store leftovers in an airtight container.
- These tortillas can be frozen.
