Ingredients

- 200g pitted dates
- 1 cup boiling water
- 1 teaspoon baking soda
- 200g brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 2 clementines
- Juice of 2 clementines
Instructions
- Preheat your oven to 180°C (350°F).
- Combine dates and boiling water in a bowl. Stir in baking soda and let it sit.
- In a separate bowl, mix brown sugar, eggs, and oil until smooth.
- Add vanilla, flour, baking powder, and salt. Mix until combined.
- Stir in date mixture, clementine zest, and juice.
- Pour batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- Serve with whipped cream or ice cream for extra indulgence.
- This cake can be made a day ahead for better flavor.
