  • 1/2 cup vegetable oil

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 clementines
  • Juice of 2 clementines

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Combine dates and boiling water in a bowl. Stir in baking soda and let it sit.
  3. In a separate bowl, mix brown sugar, eggs, and oil until smooth.
  4. Add vanilla, flour, baking powder, and salt. Mix until combined.
  5. Stir in date mixture, clementine zest, and juice.
  6. Pour batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let it cool before serving.
