Description

Sticky toffee pudding is a rich dessert made with moist sponge cake, dates, and a luscious toffee sauce.


Ingredients

  • 200g dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 200ml heavy cream
  • 100g brown sugar (for sauce)
  • 50g unsalted butter (for sauce)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine chopped dates and boiling water. Stir in baking soda and let it sit.
  3. In another bowl, cream together butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in flour, vanilla extract, and salt until just combined.
  6. Fold in the date mixture.
  7. Pour the batter into a greased baking dish.
  8. Bake for 30-35 minutes or until a skewer comes out clean.
  9. For the sauce, combine cream, sugar, and butter in a saucepan over medium heat. Stir until thickened.
  10. Serve pudding warm drizzled with toffee sauce.
