Sticky toffee pudding is a rich dessert made with moist sponge cake, dates, and a luscious toffee sauce.

- 200g dates, chopped
- 250ml boiling water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 150g all-purpose flour
- 1 tsp vanilla extract
- 1/2 tsp salt
- 200ml heavy cream
- 100g brown sugar (for sauce)
- 50g unsalted butter (for sauce)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine chopped dates and boiling water. Stir in baking soda and let it sit.
- In another bowl, cream together butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in flour, vanilla extract, and salt until just combined.
- Fold in the date mixture.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until a skewer comes out clean.
- For the sauce, combine cream, sugar, and butter in a saucepan over medium heat. Stir until thickened.
- Serve pudding warm drizzled with toffee sauce.

- Can be made ahead and reheated.
