Description

A hearty and flavorful stovetop white chicken chili.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • Salt and pepper to taste
  • 1 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add chicken breasts and cook until browned.
  3. Stir in green chilies, beans, corn, cumin, chili powder, salt, and pepper.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Remove chicken, shred, and return to pot.
  7. Stir in sour cream and heat through.
  8. Garnish with cilantro before serving.

  • Can be served with tortilla chips.
