Description
A hearty and flavorful stovetop white chicken chili.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup corn, frozen or canned
- Salt and pepper to taste
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add chicken breasts and cook until browned.
- Stir in green chilies, beans, corn, cumin, chili powder, salt, and pepper.
- Add chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Remove chicken, shred, and return to pot.
- Stir in sour cream and heat through.
- Garnish with cilantro before serving.
Notes
- Adjust spices according to your taste.
- Can be served with tortilla chips.
- Store leftovers in the refrigerator for up to 3 days.
