- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120 g) sour cream
- ½ cup (120 g) cream cheese, softened
- 1 cup (150 g) fresh strawberries, diced
- Powdered sugar, for dusting
- Additional strawberries, for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until combined.
- Add the sour cream and softened cream cheese to the mixture. Beat until smooth and well combined.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, slice and serve topped with additional fresh strawberries and powdered sugar.
Notes
- For added flavor, consider adding a teaspoon of lemon zest to the batter.
- This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
