Delicious vegan and gluten-free strawberry crumb bars.
Ingredients

- 2 cups gluten-free oats
- 1 cup almond flour
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, diced
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix oats, almond flour, melted coconut oil, maple syrup, and vanilla.
- Press half of the mixture into a lined baking pan.
- In another bowl, combine strawberries, cornstarch, and lemon juice.
- Spread the strawberry mixture over the crust in the pan.
- Top with the remaining oat mixture.
- Bake for 25-30 minutes or until golden brown.
- Let cool before slicing into bars.
Notes
- Store in an airtight container.
- Best enjoyed within a week.
- Substitute strawberries with other berries if desired.
