Description
Delicious Strawberry Swirl Cream Cheese Cake with fresh strawberry flavor.
Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- 1 cup fresh strawberries, pureed (plus extra for swirls)
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon lemon juice
- Fresh strawberries, sliced (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined.
- Gently fold in the strawberry puree until evenly distributed throughout the batter.
- In a separate bowl, beat the softened cream cheese with powdered sugar and lemon juice until smooth and creamy.
- Pour half of the cake batter into the prepared cake pan. Dollop half of the cream cheese filling over the batter and swirl it gently with a knife. Pour the remaining cake batter on top, followed by the rest of the cream cheese filling. Use a knife to create swirls in the top layer for a marbled effect.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, slice the cake and garnish with fresh strawberry slices. Serve on a simple white plate for an inviting presentation.
Notes
- For added flavor, mix some chopped fresh strawberries into the cake batter.
- This cake pairs wonderfully with whipped cream or a scoop of vanilla ice cream.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
