Description

Delicious Strawberry Swirl Cream Cheese Cake with fresh strawberry flavor.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh strawberries, pureed (plus extra for swirls)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon lemon juice
  • Fresh strawberries, sliced (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined.
  6. Gently fold in the strawberry puree until evenly distributed throughout the batter.
  7. In a separate bowl, beat the softened cream cheese with powdered sugar and lemon juice until smooth and creamy.
  8. Pour half of the cake batter into the prepared cake pan. Dollop half of the cream cheese filling over the batter and swirl it gently with a knife. Pour the remaining cake batter on top, followed by the rest of the cream cheese filling. Use a knife to create swirls in the top layer for a marbled effect.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled, slice the cake and garnish with fresh strawberry slices. Serve on a simple white plate for an inviting presentation.

Notes

  • For added flavor, mix some chopped fresh strawberries into the cake batter.
  • This cake pairs wonderfully with whipped cream or a scoop of vanilla ice cream.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
