Ingredients

- 2 pounds of chicken fillet
- 1 can of corn, drained
- 1 cup of mayonnaise
- 1 cup of shredded cheese
- 1 tablespoon of chili powder
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions
- Place chicken fillet in the crockpot.
- Add corn, mayonnaise, cheese, chili powder, garlic powder, salt, and pepper.
- Squeeze lime juice over the mixture.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, shred the chicken and mix well.
- Garnish with fresh cilantro.

- Serve with tortillas or over rice.
- Adjust seasonings to taste.
- For a spicier kick, add jalapeños.
